Do you love chicken salad but are unsure how to make it yourself? This blog post is for you. There are so many great chicken salad recipes, available, so where do you start? I will share with you a simple recipe, as well as tips on how to make your chicken salad taste even better. Let’s get started!

This recipe is not one of those traditional chicken salad recipes. What I’ve created is simple and straightforward, with a fantastic marinade for the chicken. Also, this delicious salad can be tailored to your personal preferences. Chicken salad or any salad for that matter is the perfect dish to pack for a picnic, work lunch, or on the go!

Homemade chicken salad is a dish made from marinated chopped chicken mixed with vegetables, and fruits like tomatoes, and avocados, then tossed in a flavorful homemade dressing. It is typically served on bread as a sandwich, or as a lunch or dinner main meal.

First I start by marinating and cooking some chicken breasts or thighs. I prefer to use chicken thighs as they have way more flavor and don’t dry out. You can also cook a whole roast chicken and shred it if you’re feeding a crowd.

Once the chicken is cooked, chop it into small pieces and add it to a bowl with vegetables, I like to use roasted beetroot, red peppers, sweet potato aka kūmara, avocado, cherry tomatoes, camembert cheese, and fresh thyme. You can add more avocado to create your very own chicken avocado salad!

Drizzle in some homemade salad dressing, stir everything together until evenly mixed, then taste the salad and adjust the seasoning as needed. Serve the salad between 2 pieces of butter bread on top of crackers, or just enjoy it as is!

How Is Smoked Paprika Made

Paprika is made by grinding up dried red peppers. The most common variety of pepper used for paprika is the milder, sweeter bell pepper, but hotter varieties like cayenne can also be used. Once the peppers are ground, the paprika is smoked over a wood fire. This gives it a unique flavor that can be used to enhance marinades, salads, poached eggs, and other dishes.

Then there are the people who if they eat a certain food group like peanuts or crustaceans (shellfish) both these foods can induce Anaphylaxis: A life-threatening reaction. Adequate treatment for anaphylaxis can save lives.

If you suspect that you or anyone are experiencing a severe allergic reaction, seek medical attention as soon as possible. Symptoms of anaphylaxis include but are not limited to hives, difficulty breathing, and sudden weakness or confusion.

Getting to the point the quantities in this recipe are only a guideline, you can add more or less of any ingredient or omit something altogether. However in saying that for the best flavor profile and micro-nutrients it is recommended that you follow the recipe and don’t remove too many ingredients.

Why is my chicken salad bland?

There are a few potential reasons why your chicken salad might be bland. One reason could be that you’re not using enough salt. Another reason might be that you’re not using flavorful ingredients like smoked paprika, olive oil, lemon juice, or fresh herbs.

Finally, it’s possible that you’re not adding a homemade dressing like a vinaigrette or mixing the ingredients together well enough. Try experimenting with different fruits, vegetables, and seasonings. All this can make a difference.

  • As a chef the most underrated ingredient in the kitchen is salt. When my recipes call for salt and pepper I use a variety of different salts and freshly ground black pepper.

Many chefs, including myself, prefer sea salt like Maldon salt flakes or Himalayan pink salt. Both can be used for cooking and finishing. They have a refined flavor that brings out the natural taste of food.

Ingredients
  

Chicken Marinade

  • 600 grams Fresh boneless chicken thigh
  • 2 tbsp Smoked paprika
  • 1 tsp Dried oregano
  • 2 each Cloves garlic - crushed
  • 1 tsp Himalayan pink
  • 1 tsp Black pepper - freshly ground
  • 2 tbsp Rice bran or vegetable oil

Vegetables

  • 1 each Red pepper aka capsicum
  • 1 each Whole fresh beetroot
  • 3 each Medium sized kumara aka sweet potato
  • 14 each Cherry Tomatoes
  • 2 each Hass avocados
  • 100 grams  Camembert cheese
  • 3-4 each Butterhead lettuce leaves
  • 2 sprigs Fresh thyme

Condiments

  • 1 tbsp Balsamic vinegar
  • 2 tbsp Virgin olive oil
  • 1 tsp Himalayan pink salt
  • 1 tsp Black pepper - freshly ground

Instructions
 

Marinating The Chicken 

  • Finely chop the garlic, mix smoked paprika, oregano, garlic, salt, pepper, and oil together.
    Mix with the boneless chicken thighs, you can cover and leave in the fridge or use straight away.
    You can marinade the chicken the night before or in the morning this will give the chicken a better flavor.

Prepping The Vegetables

  • Preheat oven to 165ºC or 329ºF. Peel the beetroot and cut into wedges, season with salt, pepper, and fresh thyme, drizzle with olive oil and wrap in aluminum foil.
    Peel and dice kumara into evenly sized pieces, deseed and slice the red pepper into even pieces.
    Place the chicken and the vegetables into a baking tray and bake in the oven for 20 – 30 minutes.

Creating Your Salad

  • When the chicken and vegetables are cooked.
    Half the tomatoes and slice the camembert cheese, break the chicken into bite-sized pieces.
    Deseed the avocados and dice. Wash and dry the butterhead lettuce. Mix all the salad components together, including the butterhead lettuce leaves.
    Break the camembert cheese into small pieces. Whisk the virgin olive oil and balsamic, drizzle half into the salad when mixing. 
    Arrange the salad onto a plate, drizzle the leftover balsamic dressing onto the salad.
