My Creative Thought Process

It was a cold dreary day and everybody wanted dessert after dinner. So I looked in the fridge and freezer, and I discovered that we still had one bag of blueberries from when we went blueberry picking.

We also had some apples and I had a vanilla bean. So I decided to make a simple blueberry apple and vanilla bean crumble.

This is something I used to make when the boys were young children so for me it was a trip down memory lane. Blueberries are one of those fruits that I love especially when they are fresh, even better when we go and pick them ourselves.

Blueberry apple crumble is one of those simple dishes when cooked can be very satisfying to eat on a cold winter day. Autumn and winter are when seasonal fruits are abundant.

Fruits like feijoas, kiwifruit, pears, passion fruit, and persimmons, all are excellent for crumbles and pies. I usually would have used whole cloves.

The only downside to using cloves is if you got one in your mouth and accidentally bit on it you were considered unlucky.

This time I used a vanilla bean, which gave the blueberry apple crumble a subtle vanilla flavor. I Always have served the crumble with fresh thickened cream.

Food Is Very Subjective

What I like, you might not, and vice versa. Different people have different taste buds – some overly savory flavor orientated.

Others are at the other end of the scale. Some people may want overly spicy, sour, or sweet flavor notes.

There is a cultural aspect that is sometimes overlooked, Halal and Kosher are two that come to mind.

Allergens in today’s world are trending where people make an informed or uninformed lifestyle choice to remove allergens from their diet, gluten, dairy or soy are good examples.

Then there are the people who if they eat a certain food group like peanuts or crustaceans (shellfish) both these foods can induce Anaphylaxis: A life-threatening reaction.

Adequate treatment for anaphylaxis can save lives.

If you suspect that you or anyone are experiencing a severe allergic reaction, seek medical attention as soon as possible.

Symptoms of anaphylaxis include but are not limited to hives, difficulty breathing, and sudden weakness or confusion.

Getting to the point the quantities in this recipe are only a guideline, you can add more or less of any ingredient or omit something altogether. 

However in saying that for the best flavor profile and micro-nutrients it is recommended that you follow the recipe and don’t remove too many ingredients.

Maldon Sea Salt Flakes
  • As a chef the most underrated ingredient in the kitchen is salt. When my recipes call for salt and pepper I use a variety of different salts and freshly ground black pepper.

Many chefs, including myself, prefer sea salt like Maldon salt flakes or Himalayan pink salt. Both can be used for cooking and finishing. They have a refined flavor that brings out the natural taste of food.

Ingredients
  

Crumble Topping

  • 2 cup Flour - plain
  • 1 cup Rolled Oats
  • 1 cup Sugar - brown
  • 200 grams Butter unsalted - melted
  • pinch Himalayan pink salt

Crumble Filling

  • 4 each Apples - peeled and diced
  • 250 grams Blueberries - fresh or frozen
  • 1 each Vanilla bean or essence
  • ½ cup Sugar - brown
  • cup Water

Condiments

  • 200 mls Cream fresh - thickened
  • Fresh mint leaves

Instructions
 

Crumble Filling

  • Preheat oven to 160ºC or 320ºF.
    Split the vanilla bean and scrape out the seeds.

  • Place the peeled and diced apples into a pot, along with the blueberries, ½ cup brown sugar, and the vanilla bean and seeds.

  • When the fruit has simmered for 10 minutes, place it into a baking dish and set to one side.

Crumble Topping

  • Place the dry ingredients into a bowl, add the melted butter, and lightly mix so it forms a crumble-like texture.

  • Tip the crumble mixture on top of the cooked blueberry apple stew and place it into the oven for 30–35 minutes.
    The top should be lightly brown and crisp up. 

Plating The Crumble

  • When your blueberry apple crumble is cooked you can let it sit for 10–15 minutes.
    Everyone can wait for their dessert.  Blueberry apple crumble is an easy meal to plate.
    You don’t need fresh mint however the mint gives the dish a refreshing minty flavor.
