Chicken Marinade

  • 6-8 each Chicken thighs - skinless, bone-in
  • 1 lemon Juice and zest
  • 5 cloves Garlic - peeled
  • 2 tbsp Mustard - wholegrain
  • 2 sprigs Rosemary - fresh
  • drizzle Rice bran oil
  • Himalayan pink salt and freshly ground black pepper


  • 4 medium Potatoes agria - peeled and quartered
  • 2 medium Kumara aka sweet potato - peeled and quartered
  • 200 grams Green beans - topped and tailed
  • Drizzle Rice bran oil
  • Himalayan pink salt and freshly ground black pepper


  • Olive oil - extra virgin
  • sprigs Rosemary


Marinating Chicken

  • Preheat oven to 170°C or 340°F.
    Using a bullet blender or stick blender place the lemon juice and zest, garlic, mustard, rosemary, rice bran oil, Himalayan pink salt, and freshly ground black pepper.
    Blend to a smooth paste and rub over the chicken thighs, let stand for 5 – 10 minutes.
    Or if you've got time place the marinated chicken into the fridge for a couple of hours or overnight.
    Lay the chicken thighs into a baking tray and place them into the oven.

Roasted Potatoes and Kumara

  • Prep vegetables and cut into quarters season with Himalayan pink salt and freshly ground black pepper, drizzle over some rice bran oil.
    Mix them well so the seasoning and oil evenly coats the vegetables.
    Place them into the same baking tray as the chicken thighs, if they don't fit use a second baking tray.
    The chicken and vegetables together should take 30 – 35 minutes.
    The endpoint temperature of the chicken should be 68-75°C or 154-167°F.

  • Heat a non-stick pan drizzle in some rice bran oil and throw in the beans, sauté for 2-3 minutes, and season with Himalayan pink salt and freshly ground black pepper.
