Feijoa Cake Batter
- 8-10 each Feijoas - peeled and diced
- ½ cup Sugar - white
- ½ cup Butter - unsalted
- 2 each Eggs - free range
- ½ tsp Vanilla essence
- ½ cup Milk - full cream
- 1 cup Flour - self-raising
- 1 cup Fruit or plain yogurt
- Preheat oven to 180ºC or 356ºF. Peel and dice the feijoas, place them to one side.
- Cream the butter and sugar, add the eggs one at a time and mix after each addition. Add the vanilla essence.Fold in the flour. Split the diced feijoas into two, place half into the cake batter and blend the other half to a pulp and mix into the batter.
- Line the base and sides of a springform tin with baking paper, pour the cake batter into the tin.
- Place into the middle of the pre-heated oven for 45 – 50 minutes.When cooked the feijoa cake should be springy if unsure insert a skewer in the center if comes out clean it's cooked.
Serving The Feijoa Cake
- Let the feijoa cake stand for 10 – 15 minutes before unmoulding from the cake tin.When cool, portion into 12 even pieces, and serve with fruit or plain yogurt and some fresh feijoas.
