Making A Great Cheeseburger Is Easy

Who doesn’t love a great cheeseburger? They’re the perfect comfort food – tasty, filling, and not too complicated to make. There’s just something about the way the cheese and beef come together that makes your taste buds happy.

Luckily, it’s not hard to make a great cheeseburger at home. In fact, with just a few simple tips, you can have one on your table that will rival any restaurant. So heat the pan or fire up the grill, and let’s get started!

Over the decades of cooking professionally, I’ve created many burger variations. One of my favorites has always been the cheeseburger. There’s something magical about the combination of beef and cheese. 

Knowing how to make a great cheeseburger is a life skill, placing a perfectly cooked beef patty between a toasted bun with salad, pickles, and sauces is an art form. Simple ingredients turned into something amazing and comforting.

What Makes A Great Cheeseburger

There are a lot of things that can make a great cheeseburger. The bun should be soft, fresh, and perfectly toasted. The beef should be well seasoned and slightly pink in the middle when cooked, and the cheese should be intensely savory in flavor, melted and gooey.

The sauce and mayonnaise are important components and shouldn’t be overlooked, a great cheeseburger should have bbq sauce and Dijonnaise or mustard mayo.

There should be salad – lettuce, tomatoes, and pickles. Red onion and fresh chili are optional. The freshness of the salad will cut through the richness of the beef and cheese.

The beef should have a high-fat content of 75% ground beef and 25% fat. But most importantly, it’s all about the seasoning and balance.

A great cheeseburger has the perfect ratio of beef to cheese to salad to bun. Too much beef and it becomes overpowering, too little cheese and you might as well just have a hamburger.

Too much salad and it becomes a salad, not a cheeseburger, too much bun makes it difficult to eat. The ideal proportion is about ½ pound or 250 grams of beef, 1 oz or 28 grams of cheese, a salad that fits nicely into the palm of your hand, and a 3-inch or 8-cm diameter bun.

What to look for when buying mince aka ground beef.

CL is an acronym for chemically lean mince aka ground beef. This is where a sample of ground beef is cooked and the fat content is measured against the meat content. This is a more accurate measurement.  E.g. 75 CL 75% meat to 25% fat.  

VL is an acronym for visually lean ground beef. This refers to a visual assessment of the beef and is measured as a percentage of fat to meat ratio.  E.g. 80 VL 80% meat to 20% fat.  

How To Cook A Great Cheeseburger

Form the beef into patties that are about 1/2-inch or 1.2-cm thick, and grill or pan-fry them over medium-high heat to create a caramelized crust and lock in those juices.

This should take about 4 minutes per side. Place the cheese on the patties. Be sure to let the burgers rest for a few minutes after you remove them from the grill so that the cheese can melt properly.

Best Way To Make A Cheeseburger At Home

There are all sorts of ways to make a cheeseburger at home, but my personal favorite is to use a cast iron pan. Cast iron heats evenly and retains heat well, so, your burger will cook evenly, giving the burger patty a nice caramelized crust locking in those juices.

Cast iron has natural non-stick properties, so, you won’t have to worry about the patties sticking and will only need to use a small amount of oil or fat.


  • I use beef dripping when cooking my burger patties, as this adds another layer of beef flavor. That beautiful savory beef flavor that we all love comes from the fat content in the meat, using beef dripping will add another flavor layer. It’s not that healthy however it tastes awesome.

Seasoning Food

Maldon Sea Salt Flakes
  • As a chef the most underrated ingredient in the kitchen is salt. When my recipes call for salt and pepper I use a variety of different salts and freshly ground black pepper.

Many chefs, including myself, prefer sea salt like Maldon salt flakes or Himalayan pink salt. Both can be used for cooking and finishing. They have a refined flavor that brings out the natural taste of food.

Beef Patties

  • 1 kg Beef mince aka ground beef - 25% fat/75% beef
  • Himalayan pink salt and freshly ground black pepper
  • drizzle Rice bran or vegetable oil
  • 4 slices Aged cheddar cheese

Salad Ingredients

  • 1 each Tomato - beefsteak
  • 4 each Lettuce leaves
  • Jalapeno chilies - optional
  • Pickles - homemade


  • ¼ cup Mayonnaise
  • ¼ cup Mustard - Dijon


  • 4 each Burger buns
  • Barbecue sauce - your favorite


Beef Patties

  • Heat a cast-iron pan add a drizzle of oil or teaspoon of beef dripping and add the beef patties, use a patty press to flatten them out.
    Best to cook them in batches, 2 or 3 at a time.
    Cook them 3 – 4 minutes per side, the mince was store brought so I cooked to an internal temperature of 62ºC or 143ºF which is medium-well and slightly pink on the inside.
    When done slice the cheese and place on top of the patty, place a lid on top of the pan, and rest for 1 – 2 minutes.

Salad Ingredients and Condiments

  • Make the Dijon mayo, whisk the Dijon and mayo together.  Slice tomatoes, and cut the buns in half.
    Wash and dry the lettuce, and toast the buns.

  • Now you’re ready to start constructing your great cheeseburger.
    I start with the Dijon mayo on the bottom and top of the bun. Then add the salad, tomatoes, pickles, and jalapenos.
    Followed by the patty or patties, and barbecue sauce.
