Making an amazing hot dog may seem a daunting task, however, you’ll be thinking about where to start. What to put in them? Luckily for you, I’m here to help! Firstly you’ll need to start with a quality sausage, sure you can use frankfurters, but I want to take it to the next level!

They can be done in no time, you’ll need a kettle charcoal bbq and some wood chips like apple or hickory wood. This will give the hot dog sausages an amazing wood-fired smokey flavor.


  • When smoking hot dog sausages you’ll need to buy sausages with natural hog casings, Why? Because if you use sausages with a synthetic casing the smoke will not penetrate into the meat and you won’t get that amazing wood-fired flavor.

How do you know if the hot dog sausages you are buying have a natural casing? Buy your sausages from a specialist like a butcher shop, or master butcher specializing in sausage making. To smoke the sausages we’ll be hot smoking them.

Set your charcoal fire up, it’s a good idea to soak your wood chips for 3 – 4 hours this will help create damp smoke. Place your sausages around the hot charcoal and place the lid on, and open the bottom vent on the BBQ a quarter of the way.

Open the top vents a quarter of the way as well, You’re looking for a constant temperature of 130ºC or 260ºF. Leave the sausages in the smoke for 15 – 20 minutes.

Smoking Sausages

  • Smoke the sausages on your charcoal bbq, or grill them on your gas bbq. If you don't have a bbq you can use a pan, you just won't get that awesome wood-fired smoky flavor.

Grated Potato Pancake

  • Grate the potatoes season with Himalayan pink salt and freshly ground black pepper.
    Mix well, heat a sandwich press, and brush with a little oil. Squeeze out any access moisture, and evenly spread out the grated potato onto the base of the sandwich press.

  • Close the sandwich press and cook for 8 minutes, the potato pancake will be golden brown, and fluffy on the inside.

  • Warm the buns this can be done by placing them into the bbq for 1-2 minutes.
    Cut the buns and place the grated potato pancake and grated cheddar inside.
